Ingredients
- Tilapia Ingredients:
- 1 lb tilapia fillet
- 1 tablespoon Pendery's Chile Blend (Fort Worth Light)
- 1 teaspoon Pendery's Ground Cumin (Comino)
- 1 teaspoon Pendery's Chile Pepper (Chipotle Ground)
- ½ teaspoon Pendery's Fine Flake Salt
- ½ teaspoon Pendery's Black Table Pepper
- 1 tablespoon lime juice, about 1 lime
- 1 tablespoon olive oil
- Sauce Ingredients:
- 1 avocado
- ½ cup Pendery's Large Flake Cilantro
- ½ teaspoon Pendery's Chile And Lime Salt
- ½ teaspoon Pendery's Blake Table Pepper
- 1 tablespoon lime juice, about 1 lime
- ¼ cup yogurt (60 g)
Method
- 1. Preheat oven to 400˚F (200˚C).
- 2. In a small bowl, mix the chili powder, cumin, cayenne, salt, pepper, and olive oil with the lime juice.
- 3. Using a basting brush, generously coat each side of the tilapia fillet with the marinade.
- 4. Bake fish for 12 minutes in a preheated oven until edges begin to crisp and fish is moist and flaky.
- 5. While fish is baking, prepare the crema.
- 6. In a blender, combine avocado, cilantro, salt, pepper, lime juice, and yogurt. Blend until mixture is smooth.
- 7. Serve tilapia topped with avocado crema and freshly chopped cilantro.
